Bread And Butter Pudding With Wattleseed And Craisins
Try a delicious traditional family dessert recipe with an Aussie twist that always goes down a treat.
Ingredients
• 6 slices day-old bread
• 100g butter
• 1/2 cup craisins
• 1/2 cup Quandong Jam
• 1 1/2 cups milk
• 1 1/2 cup cream
• 4 eggs
• 1/4 cup brown sugar
• A pinch of Wattleseed
Method
- Preheat oven to 170°C.
- Butter bread thickly and remove the crusts. Place two slices of bread, butter side down, into a greased baking dish. Sprinkle with craisins and drizzle with jam. Repeat layers of bread, craisins and jam, ending with bread butter side up, topped with craisins.
- Mix milk and cream in a bowl. Pour one cup of the mixture over the bread to absorb.
- In a separate bowl, beat eggs and sugar until creamy. Add the remaining milk and cream mixture to the egg mixture and stir to combine. Pour over the bread and sprinkle with the Wattleseed.
- Bake for 45-60 minutes.
Serve with cream or ice cream.
